Pasta is the ultimate dinner! It is so delicious and this recipe would actually be lovely cold and served for lunch the next day!
I used some avocado and just made sure it is ripe, you can tell this by gently pressing the outside and if it is hard do not buy but if it is softer then it’s ready.
Also, if it is too soft avoid - try and find the balance!

Ingredients:
-120g uncooked pasta
- 3x cloves of garlic
- 2x spring onions
- 2x chicken breast (I used my marinated chicken breast, see the full recipe here) around 280g raw weight
- 1/2 x medium avocado
- Sea salt & black pepper
- 15g feta crumbled
- Chopped basil
- 6x button mushrooms
- 1x stock cube mixed with 150 ml water
- 100 ml light milk
- Juice of one lemon
- 100g light crème fraiche
- Bunch of rocket
Method:
1. Cook your pasta as per packet instructions
2. Add your chicken, onion and garlic to the pan- fry for 5 minutes.
3. Add in your avocado and mushrooms
4. Add in your stock and milk and simmer for 4 minutes.
5. Stir in your crème fraiche and when it is heated add in your lemon juice.
6. Season and stir in your rocket and basil.
7. Serve with some crumbled feta on top and enjoy!
