A really fast dinner and tasty too! I would recommend that when you are cooking your pasta, cook enough for 2 nights so that all you really have to do is assemble the sauce part! Cooking should be fun and stress free!!
I used regular pasta here but if you have someone who is a coeliac you can do a simple swap to gluten free pasta! I added some rocket in for an extra hit of pepper taste!

Ingredients:
- 160g pasta (uncooked weight)
- 1 x sprig rosemary
- 75g smoked pancetta
- 2 x spring onions
- 10 x cherry tomatoes
- 3 x cloves garlic
- Salt and pepper
- 150ml water mixed with 1 x chicken stock cube
- 30g tomato puree
- 100g lightest cream cheese
- Bunch of rocket
Method:
1. Cook your pasta as per packet instructions
2. In a pan add in your bacon with no oil and leave the fat render down and crisp up.
3. Add in your onions, garlic, tomatoes and fry gently.
4. Add in your stock and puree and simmer.
5. Add in your cream cheese and pasta and simmer for 5 minutes.
6. Season and stir in your rocket.
7. Serve and enjoy.
