You will need:
6 Healy’s free-range eggs
1 finely diced white onion
1 tsp olive oil
6 small baby potatoes (rinsed to remove the starch)
Salt and pepper
How to:
Heat your pan and soften the onion and potatoes in the oil for 10 mins. Whisk your eggs, season, then pour in and use the side of a wooden spoon to shape it like an omelette. Cook for 7-10 minutes
So tasty and handy! Have them ready in the fridge from last night!
