Who knew you could cook lasagne in a slow cooker? This is such an easy, cost effective, high in protein and family friendly recipe! Perfect for the busy back to school season! Save for later when you need a delicious, easy dinner.
Serves 6:
600g 3% Low Fat Beef Mince
1 x tsp olive oil
2 x onions
6 x garlic
2 x red peppers
1 x courgette
10 x mushrooms
One pack of lasagne sheets
2 x tins of chopped tomatoes
One jar of white sauce or you can make your own I will add the method below
200g lighter cheddar
Salt and pepper
1 x sprig of thyme
Method:
1. In a pan fry your oil, onions, garlic and mince.
2. Add your seasoning & thyme.
3. Add in your mushrooms and chopped tomatoes and simmer for 15 minutes.
4. Add in your red pepper and courgette- I would dice these.
5. Assemble in your slow cooker and start with a pasta layer, add the beef and then the white
sauce. Repeat until your last layer is pasta, white sauce and cheese.
6. Cook in your slow cooker on high heat for 4 hours.
7. Serve and store in the fridge the leftovers for tomorrows dinner!
If you would like to make your own white sauce you will need:
300ml light milk
1 x onion diced small
25g butter
20g plain flour
Salt and pepper
Method for white sauce:
1. Saute your onion in a pot.
2. In the same saucepan over medium heat add in your milk, butter & flour.
3. Whisk loads and loads and loads until the sauce thickens and this should take around 3-4
minutes.
