The key to the perfect roast potato is in the following steps.
4kg Maris Pipers
60g goose fat
40ml olive oil
Sea salt and black pepper
2 x tsp dried oregano
8 x cloves garlic
Preheat your oven to 200 degrees Celsius
Peel, soak, parboil, strain and shake your spuds.
Add to a hot tray of goose fat and season well.
Cook for 25 minutes, shake around and cook for the final 15 minutes!
