Rainbow Carrot Soup

Here’s what’s in it:
– 600g carrots
– 1 white onion
– 6 garlic cloves
– 1 red chilli
– 2 tsp turmeric
– Olive oil
– 2 bay leaves
– 1 tin chopped tomatoes
– 200ml veg stock
– 100ml cream
– Drizzle of honey
– Salt & pepper

How to make it:
Toss the carrots, onion, garlic & turmeric with olive oil and roast at 180° for 20 mins.
While that’s roasting, simmer the chopped tomatoes and veg stock with the bay leaves.
Add in the roasted veg, drizzle over your honey, blend until smooth, then finish with cream, salt, and pepper.

Sweet, spiced, and so satisfying.
