Cooking Time: 1 hour 30 minutes
Ingredients:
• 1 loin of bacon (100% Irish Bord Bia Quality Assured)
• 1 head of cabbage
• 1 litre of water
• 12 peppercorns
• 4 sticks of celery
• 1 white onion
Method:
1. Place the bacon in a pot of cold water.
2. Add in the celery, peppercorns, carrots, and onion.
3. Bring to a boil, then reduce to a simmer for 1 hour.
4. Add in the cabbage and simmer for another 30 minutes.
5. Serve with mash, carrots, parsnips, and parsley sauce.
