This hearty beef stroganoff is not only delicious but also a great option for batch cooking. Originating from Hungary, this dish is rich in flavour thanks to the paprika, and you can easily substitute beef with chicken or pork for a variation.

Ingredients:
2 tsp olive oil
350g beef fillet sliced
2 white onions, finely sliced
4 cloves garlic, minced
2 tbsp tomato purée
3 tsp paprika
200g light sour cream
100ml beef stock
Chopped parsley (for garnish)
300g sliced button mushrooms
Sea salt and freshly ground black pepper, to taste
1 tsp whole grain mustard
Method:
1. Prep the Ingredients: Slice the beef into thin strips and season with salt and pepper.
2. Cook the Beef: Heat a frying pan over medium-high heat. Add the olive oil and then the beef. Fry for 1-2 minutes until browned. Remove the beef from the pan and set aside.
3. Sauté Onions and Garlic: In the same pan, add the sliced onions and minced garlic. Sauté until the onions are translucent.
4. Add Mushrooms: Stir in the sliced mushrooms and cook for about 3 minutes until they start to soften.
5. Incorporate Spices: Add the paprika and cook for an additional minute to release its flavor.
6. Create the Sauce: Return the cooked beef to the pan. Add the tomato purée, beef stock, and whole grain mustard. Bring to a simmer and let it cook for 5 minutes.
7. Finish with Light Sour Cream: Reduce the heat, then stir in the light sour cream. Season with additional salt and pepper, if needed. Simmer gently for another 2 minutes, ensuring the sauce is well combined and heated through.
8. Garnish and Serve: Remove from heat and garnish with chopped parsley. Serve with rice, potatoes, or pasta for a complete meal.
