Serves: 4
Cooking Time: 20 minutes
Ingredients:
• 1 head of broccoli
• 1 white onion
• 3 cloves of garlic
• 4 sticks of celery
• 1 bag of spinach
• 1 vegetable stock cube mixed with 300ml water
• 1 teaspoon Dijon mustard
• 1 teaspoon olive oil
• Salt and pepper
• 100ml cream
• Sprinkle of cheddar cheese (for garnish)
• Curly parsley (for garnish)
Method:
1. Slice up all your vegetables really small—the smaller they are, the quicker they cook.
2. Heat the olive oil in a pot and sauté the onions, garlic, and celery until soft.
3. Add in the broccoli, vegetable stock, and Dijon mustard, then let it simmer for 20 minutes.
4. Stir in the bag of spinach (this will give it a vibrant green colour).
5. Pour in the cream, blitz until smooth, and serve.
6. Garnish with a sprinkle of cheddar and fresh curly parsley.
