🍽️ Stuffed Chicken with Roasted Tomatoes 🍅
✨ A simple, delicious dinner for two!
Ingredients:
• 2 chicken breasts
• 50g light cream cheese
• 1 slice of ham
• 20g cheddar, grated
• Salt and pepper, to taste
• 1 tbsp chopped parsley
• 6 tomatoes, halved
• 4 cloves garlic, crushed
• 2 sprigs rosemary
• 1 cup water
Instructions:
1. Prep the Chicken:
• Preheat your oven to 180°C (350°F).
• Butterfly the chicken breasts and stuff with cream cheese, ham, cheddar, and parsley. Season with salt and pepper.
2. Prepare the Base:
• In a roasting tray, arrange the halved tomatoes, garlic cloves, and rosemary. Pour in the water.
3. Roast:
• Place the stuffed chicken breasts on top of the tomato mixture.
• Roast in the oven for 30 minutes or until the chicken is cooked through.
4. Serve:
• Plate up the juicy chicken alongside the roasted tomatoes and garlic. Garnish with extra parsley if desired.
