đ˝ď¸ Stuffed Chicken with Roasted Tomatoes đ
⨠A simple, delicious dinner for two!
Ingredients:
⢠2 chicken breasts
⢠50g light cream cheese
⢠1 slice of ham
⢠20g cheddar, grated
⢠Salt and pepper, to taste
⢠1 tbsp chopped parsley
⢠6 tomatoes, halved
⢠4 cloves garlic, crushed
⢠2 sprigs rosemary
⢠1 cup water
Instructions:
1. Prep the Chicken:
⢠Preheat your oven to 180°C (350°F).
⢠Butterfly the chicken breasts and stuff with cream cheese, ham, cheddar, and parsley. Season with salt and pepper.
2. Prepare the Base:
⢠In a roasting tray, arrange the halved tomatoes, garlic cloves, and rosemary. Pour in the water.
3. Roast:
⢠Place the stuffed chicken breasts on top of the tomato mixture.
⢠Roast in the oven for 30 minutes or until the chicken is cooked through.
4. Serve:
⢠Plate up the juicy chicken alongside the roasted tomatoes and garlic. Garnish with extra parsley if desired.
