Cauliflower Curried Soup

Wholesome & creamy cauliflower soup made easy in the soup maker! Packed with flavor and perfect for those chilly days when comfort is a must. Vegan-friendly (just check your stock cubes) and gluten-free with a simple swap!

Ingredients:

• 2 x white onions, finely chopped  
• 4 x cloves garlic, minced  
• 1 x head cauliflower, chopped  
• 2 x tsp curry powder  
• 400ml light coconut milk  
• Salt and pepper, to taste  
• 200ml vegetable stock  
• Sprig of thyme (for garnish)

Instructions:
1. Heat oil in your soup maker or a large pot, and sauté onions, garlic, and curry powder until fragrant.  
2. Add cauliflower, coconut milk, vegetable stock, salt, and pepper. Stir well.  
3. Toss in a sprig of thyme and cook until the cauliflower is tender.  
4. Blend until smooth and creamy.  
5. Garnish with thyme and enjoy a bowl of pure comfort!
