Roasted Brussels Sprouts with Smoky Bacon and Walnuts. This dish is simple, delicious, and can easily be made ahead of time for your holiday celebrations!
Ingredients:
• 200g of Brussels sprouts
• 1 x red apple
• 75g of smoky bacon (optional for a veggie-friendly version)
• 1 red onion, diced
• juice of one lemon
• 50g of crushed walnuts
• 15ml of balsamic vinegar
• Salt and pepper to taste
Method:
1. Prepare the Brussels sprouts: Blanch the Brussels sprouts the night before to save time on Christmas day! Bring salted water to a boil and cook the sprouts until the water returns to a rapid boil, then drain and cool them under cold water. This helps to retain their vibrant green color and brings out their natural sweetness.
2. Roast the sprouts: Preheat your oven to 200°C. On a roasting tray, toss your blanched Brussels sprouts, smoky bacon (optional for a veggie version, omit the bacon), red onion, and crushed walnuts with balsamic vinegar. Roast for 12 minutes, letting the flavors meld together.
3. Finishing touch: Once out of the oven, drizzle the Brussels sprouts with fresh lemon juice and season with salt and pepper to taste.
