Recipe:
• 220g plain flour
• 50g oats
• 1 tsp baking powder
• ½ tsp baking soda
• ½ tsp cinnamon
• ½ tsp salt
• 240ml buttermilk
• 100g plain yogurt
• 2 medium eggs
• 1 tsp vanilla extract
• 50g brown sugar
• 180g frozen berries
• 50g coconut
Instructions:
1. Preheat oven to 180°C (350°F). Line a muffin tin.
2. Mix flour, oats, baking powder, baking soda, cinnamon, and salt in a bowl.
3. In another bowl, whisk buttermilk, yogurt, eggs, vanilla, and brown sugar.
4. Fold wet into dry ingredients, then gently stir in frozen berries.
5. Spoon into muffin cases and bake for 20-25 mins until golden.
6. Cool, enjoy, or freeze for later!
