Raspberry & vanilla baked oats
Baked oats are so handy. They are packed with fibre and they are filling which is ideal when trying to get the scales to go the right way! Serving these straight from the oven with a mug of tea is just such a lovely nutrition but fun way to start the day. Often if I am going on a long walk or a hike, I will leave this cool and chop up so I can have some snacks on the way!
Ingredients:
50g oats
200g low fat natural yogurt
11/2 tsp of vanilla extract
1 x punnet of raspberries(60g)
2 x large eggs or 3 x medium eggs
Raspberries and mint to garnish.
Method.
1. Preheat your oven to 200 degrees Celsius and grease a tin or an oven proof dish with some low-calorie spray.
2. This is a one bowl wonder. Literally put everything into the bowl and mix together.
3. Pour into your tin and bake for 35 minutes.
4. Garnish with some fresh raspberries and picked mint for a pop of colour!
