Prepare this delicious and healthy tuna salad the night before for a quick and flavorful meal! Perfect for two, with only 347 calories per portion.
Ingredients:
• 2 tins of tuna in water (drained)
• 100g dried brown pasta (cooked)
• 1 red onion (finely chopped)
• 1 red pepper (finely sliced)
• ½ head of iceberg lettuce (shredded)
• ½ tin of sweet corn
• 30g sweet chilli sauce
• Juice of 1 lime
• Chopped coriander (to taste)
• 100g natural yogurt
• Sea salt & black pepper (to taste)
Steps:
1️⃣ Cook the brown pasta, drain, and let it cool.
2️⃣ In a large bowl, mix the tuna, red onion, red pepper, sweet corn, coriander, lime juice, and sweet chilli sauce.
3️⃣ Add the cooled pasta and yogurt, then season with sea salt and black pepper. Stir well.
4️⃣ Store in the fridge overnight.
